Shank ham (bigger is better)
Dry rub of equal parts finely ground coffee, black pepper and garlic powder
Apply the dry rub liberally to entire ham.
Place in large baking bag, seal and place on large cookie sheet/pan.
Bake at 200 degrees for 8-9 hours.
Meat should come off the bone for shredding and pulling. Delicious as a main course over cheese grits, gratin potatoes or shredded and made into sandwiches.
