4 ripe but firm avocados, peeled and diced
1/2 medium onion, diced
1 large tomato, peeled, seeded and diced (see note)
1/4 cup chopped cilantro
4 chipotle chiles in marinade
Juice of 1/2 lime
Salt to taste
Soak the chiles in hot water for 10 minutes, drain and chop finely. Combine all the ingredients and mix well.
Note: The best way to peel a tomato is to core and score the bottom of the tomato. Place the tomato in a small saucepan of boiling water for 45 seconds. Remove the tomato and place in an ice bath and the skin will peel off easily.
